Chamomile is one of the world’s oldest and most widely used medicinal herbs — a daisy-like flower in the Asteraceae family (Matricaria chamomilla, German chamomile) with a history of use as a calming, digestive tisane stretching back to ancient Egypt and Greece. The whole flowers — harvested when fully open and at peak aromatic oil content — are dried and brewed as a caffeine-free herbal infusion. The characteristic apple-honey-hay aroma comes from the volatile compound chamazulene and related terpenoids concentrated in the flower heads.
German chamomile, grown across Central Europe and Egypt, produces the highest essential oil content and the most distinctive apple-honey character. Egyptian chamomile from the Nile Delta region is particularly prized for its quality.
